We focus on simplicity and pristine ingredients, believing that if we do the hard work up-front by carefully choosing our suppliers and ingredients and work with the seasons, the dishes will create themselves.
Our menu highlights include local fish from Dungeness Fish Hut and Grigg's of Hythe, local Highland cattle, and Salt Marsh lamb, rare-breed pork and Kentish chickens. Our food lives and dies by the quality of the ingredients - we love showcasing vegetables at their seasonal peak, introducing forgotten cuts and exploring classic combinations with an unusual twist.
