A late starter (aged 30), Jeff left the software company he built and trained at the prestigious Le Cordon Bleu in Minnesota. Following his first chef's job at Alma in Minneapolis, Jeff continued to develop and learn with and from the best: Charlie Trotter's, Chicago; Citrus, St Maarten; Gordon Ramsey, London and finally Sushi Samba and Duck & Waffle, London where he was Executive Chef for the significant start-up.

In between his time in the kitchen, Jeff has gained invaluable financial, managerial and sustainability insights from roles at Alison Price, Daylesford Organic and Deliverance.

Saltwood on the Green is Jeff's first venture as a business owner.

Enrico Bessone, people guy

Italian born Enrico left his hometown of Milan to move to the bright lights of New York City back in 1998. There his career in the catering industry flourished. From managing high profile restaurants, such as Tribeca NYC and 5 Church (with more than the odd A-lister popping for a bite to eat!), to organising the opening and set up of 4 different restaurants in in Brooklyn, he took America by storm.

After nearly 20 years working and living in the hustle of the city, Enrico was keen to lower the pace a little and find a new location to bring his passion and professionalism for all things food - New York’s loss is certainly our gain.

The drinks guy

Dan started out his career cleaning glasses in the back of a French restaurant when he was 15 and has gone on to work at some of London's most prestigious and acclaimed bars. Driven by a passion for flavour and service, Dan has forged a successful career as mixologist/bartender and manager. Having worked previously at The Dorcester, Mahiki, Kanaloa, Callooh Callay and Trailer Happiness it was heading up cocktails at Sushi Samba and Duck & Waffle where Jeff Kipp and Dan first worked together, so when Jeff began planning Saltwood on the Green he quickly involved Dan in the shaping of a bespoke, innovative drinks menu.

In 2013 Dan won the Funkin Innovation Cocktail competition and is now their Brand Ambassador heading up New product Development for the bar industry.
